Popeye Know's Best!

I'm not an expert, and certainly can't quote anyone on this, but I'm pretty sure spinach has to be on the top of the World's Healthiest Food's list!
 
The bright, vibrant green color of spinach is not only inviting, but extremely nutritional.  This versatile vegetable has become a staple at our table! 
 
Lately, in my fast paced day, I've been whipping up my blender full of fruit and almond milk and adding two cups of spinach to my smoothies.  I've substituted it for lettuce on my subs, replaced my romaine in salads with spinach and even get my daughter to eat it in frozen fruit popsicles!
 
The benefits are amazing too! Spinach is a nutrition superstar, even a fairly good source of iron. It's loaded with vitamins and minerals, some of which are hard to find in other foods. 
 
We all know that Popeye ate spinach to make himself strong, but you may be surprised to learn that he may also have been helping to protect himself against inflammatory problems, oxidative stress-related problems, cardiovascular problems, bone problems, and cancers at the same time.
 
There are three different types of spinach generally. Savoy has crisp, curly leaves. Smooth-leaf has flat, unwrinkled, spade-shaped leaves, while semi-savoy is similar in texture to savoy but is not as crinkled. Baby spinach is great for use in salads.
 
Don't cook it down too much or you'll lose all its nutrients!  But serve it up, and eat it up! 
 
I just wanted to share a little bit of my food insight.  There are so many easy steps we can take during the week, like the little substitutes I mentioned above, that can help keep our bodies clean and healthy!
