Summer Time is Here!

With summer here and the kids out of school.  With vacations, plans and parties.  This summer could easily get you snacking and indulging on sugary, high caloric foods and sweets!  Prepare for a continued healthy lifestyle with some of these super yummy and filling recipes!

One of my favorite go to's is infused water!  This is a refreshing, juicy way to sip on water and receive some healthy nutrients at the same time!  Simply add fresh fruit and herbs to your super cold water!!  This makes sipping water all day fun, pretty and yummy!!

Raspberry and Strawberry
Here is a great combination rich in antioxidants – this one is simple, looks beautiful, tastes amazing, and best of all can be reused! When I’m finished with my infused water for the day I like to strain the berries and pop them into the freezer to later add to a smoothie – that way you also get the fiber content which is important for digestion.

Cedar Plank Salmon
  • 3-4, (4-6 oz.) salmon fillets
  • 1 lemon
  • 2-3 cloves of garlic, minced
  • 1 Tbsp. fresh dill, minced
  • Salt and Pepper to taste
3 hours prior to grilling, prepare your cedar plank by soaking it in water.
  1. When plank has been soaked, place your fully thawed salmon fillets on the plank. Sprinkle fillets with salt and pepper to your taste. Next sprinkle on the minced garlic and dill. Lastly, slice the lemon in half. Squeeze one half of the juice of the lemon onto the fillets. Slice the other half of the lemon in slices, then the slices in halves. Place the halves on top of the salmon.
  2. Grill for 12-15 minutes, or when salmon flakes.
